Pineapple Slush (Perfect Summer Drink!)

This fresh pineapple slush recipe comes together in less than 5 minutes for an easy, frozen pineapple drink that’s perfectly refreshing for those hot summer days. Bonus, you can easily add vodka or rum for a grown up version that won’t disappoint!

There’s nothing like a good old fashioned slushie recipe to conjure up memories of summer! As the days get longer and hotter, all I want to do is lounge around at the beach with a super tasty, refreshing drink in my hand (like this yummy Mexican watermelon water.) Bonus points if it’s a yummy frozen slush.

So as summer hits southern California and our days start to get hotter, what better way to cool off than with a delicious frozen pineapple slush? 

Before You Start 

To make this pineapple slushie, you only really need two ingredients: frozen pineapple chunks and pineapple juice, blended together. If you don’t have frozen pineapple and don’t want to wait a day to freeze your fresh pineapple, you can add ice cubes. 

  • Frozen pineapple chunks will give you a creamier, frozen slush consistency (like an icee – I love eating this with a spoon!). 
  • Fresh pineapple and ice cubes will give you a more slushie-like consistency. Both are great, but my personal favorite is to use frozen pineapple! 

How to Slice a Pineapple 

Slicing a pineapple isn’t very difficult, it just requires a few simple steps. 

  1. Get a large cutting board, chef’s knife, and pineapple. 
  2. Lay the pineapple on its side on the cutting board. 
  3. Cut off the top of the pineapple, the bushy green part.
  4. Lay the pineapple rightside up and slice off the skin, moving from top to bottom on each side. You want to remove enough skin so that there’s no major brown spots, but not too much that you take off a bunch of pineapple flesh. 
  5. Lay the pineapple on its side again and cut off the bottom. 
  6. At this point you can use a pineapple corer to remove the core. For making slushies it doesn’t really matter, so long as the core isn’t too tough. 

Pineapple Slush

This refreshing pineapple slush drink recipe is the perfect drink to keep you cool on those hot summer days. Made with freshly frozen pineapple chunks and pineapple juice, this recipe comes together in less than 5 minutes and is easy as they come!

Ingredients
  

  • 2 cups frozen pineapple chunks (12 oz by weight)
  • 8 fluid ounces pineapple juice (I used Dole brand)

Instructions
 

  • Add frozen pinapple chunks and pineapple juice to a blender.
  • Blend on high for 5-10 seconds, until blended well, using a long wooden spoon to ensure you get everything mixed well from the bottom.

Notes

If you don’t have frozen pineapple chunks, or don’t want to wait, keep recipe the same but add 18-20 large ice cubes (about 18 oz by weight) and blend until combined and the ice chunks are minimal. 

How to Make an Alcoholic Pineapple Slush 

If you’d like to spike up this pineapple slush drink recipe, you can easily do so by adding vodka or rum and making it a pineapple rum slush or a pineapple vodka slush! 

The recipe below makes two, eight ounce servings or one large 16 ounce serving. Add a shot of your favorite rum or vodka to each 8 ounce serving for the perfect alcoholic pineapple slush drink. 

How to Store Pineapple Slushies 

This recipe makes a small batch on purpose, because I think this pineapple slush drink should be enjoyed right after you make it. However, I’ve had success making this and storing it for enjoyment later. 

This works best if you use frozen pineapple chunks. Once you’ve blended your drink, put it in a freezer safe container and stick it in the freezer. When you’re ready to drink it, move it from the freezer to the fridge for about 30 minutes, or eat it straight from the freezer with a spoon!
